If i go with 19'' rims (AMG replicas) that are: 19x8 inch, high offset, Bolt Pattern=5x112mm
Will I need spacers?

For the tires, would: 225-35-19 tires be appropriate? I saw them listed as: " [2001-2006 W203 chasis(careful on sport and amg)] " but would it make a difference for the 07''s?; im guessing no, but not entirely sure.

I drive an 07'' C230 Sport Sedan.

06-07 would be the same as far as tire/wheel sizes are concerned. 225/35 should work on tires. i use a 235/35 on a 8.5" wheel. the term "high offset" could mean a number of things. get the specific offset to be sure. then either post in this thread or check in the wheel/tire thread in the w203 section of the forum.

i think it depends on the exact wheel for the offset to fit correctly, are you talking about the amg iv wheel or is it another amg wheel?
