I'm also doing a rack-n-pinion steering at the same time. It is a LOT of work and is not cheap, but it will be a significant improvement over the MB engine/tranny.
Why am I doing it? 480 HP / 450 ft. lbs of torque. No more leaky engine, no more leaky tranny, no more $1,000 AC compressor, no more whimpy performance from a gorgeous car.

I'm about half way through putting a 2002 LS6 GM engine with a custom 4L60E 4-speed automatic overdrive transmission into my '87 560SEC. It's going to be amazing.

First, check out the Conversions & Hybrids forum at LS1 Tech: http://www.ls1tech.com/forums/forumdisplay.php?f=28. A lot of friendly, knowledgeable people over there.
Second, if you follow through on the swap, the LS series engines have a lot of virtues: lightweight aluminum block, high horsepower, high torque, reasonable reliability, low cost, easy to modify.
Good luck!

Rack & Pinion
I love the rack and pinion idea as it free's me from the front sump hassle
what parts are you going to use ?
Will it screw up the geomatry ?
Is there any good reading material so I can get clued up on this ?
