This happens when the post has a set a custom font color. In the referenced example, the post has a set font color #383a3b, which is a dark gray. This can happen if the poster copies and pastes text that had the color markup or if the poster specifically set that color from the WYSIWYG editor.
Note that this could happen on the non-dark mode if a member were to copy/paste, or specifically set, a font color that was white.
At this moment, we're aware of this issue and the team is looking into it.

I really like dark mode options. I'm not fully sold on this version yet but will probably keep it turned on. The piece I'd like adjusted is how the threads are displayed. I think the normal threads are too contrasted in grey whereas the sticky threads are more what I think the should look like, more black.
Update - I turned off dark mode. I've started using the Firefox browser and it has an option to make any site dark. I just enabled it and although I'm not sure how all sites will look with the plugin, I think this is what the dark mode should look like. I know there was one comment about unread threads and it still is mildly difficult to see the difference with the bold font but at least you can clearly see the red coloring on the number of threads count.
