I would not hesitate!!!
GO FOR THE 600!
And with a couple of simple mods, you will not regret that choice...
Pro's and con's IMHO;
The 55 sounds like an old Spitfire fighter plane from World War II. And that sure is a No-No for me!
The 600 has a very fine tuned sound, smoother than silk. And with some throttle, it becomes a roaring racer sharp beast (as soon as you "straight pipe" it)..!
An ECU on the 55 will perhaps give you 25-30PS.
An ECU on the 600 will get you over 100HP.
The 55 looks better, since it has the AMG plastic.
But that can easily be put on the 600 as well.
This is of course MY opinons.
And since that was what you asked for, you got them.
Don't want to step on anybodys toes here...

This has been discussed to death around here.
I think https://mbworld.org/forums/2151653-post27.html sums it up nicely, but do read the rest of the thread.
Quite possibly these days you can get sl600 for a bit less than sl55, which is different than those 06/07 theads

Really depends on what your interested in.. If your looking to mod it I would go with the 600 (easy mod potential). With a tune the v12s are beasts. If your going to leave it stock go with the 55.

It sounds like it has a Rolls-Royce Merlin under the hood? I'd take one.

I SURE SECOND THAT!
Because the 63 also has that Mercedes-8-cyl-caractaristic "Non-Race-Tone"! But without the torque...
It's the Ducati Sound Of The Cars. And even though Ducati are great at racing, I'd rather hit the mute button on the TV, because of how they sound!
I'm quite stunned about of how they managed to make them so Non Racing sounding!
This is a matter of taste, nothing else.
But to me, it sounds like the opposite of racing, that's all.
And since the old air fighters sound EXACTLY like that, it just cracks me up...
