Maaco auto body painting?
If you are lucky and know the manager you can ge a good paint job, but I would definitely not have my Mercedes repaired or repainted at a Maaco.
Personally, from an ownership perspective, it is too much of a hands on business with a lot of risk for me. Almost every time I went in to get something painted, I was offered a discount for cash and if I would drop it off after hours. Also, they were spraying stuff outside the booth and were not concerned about washing paints and toxics down the drain. When the CARB, WQCB, EPA, etc. come knocking on the door, the owner(s) are in for a rude awakening.

You are right here. But, this does also mean that some quality shops may in fact bear the name maaco. However, taking your car to one for a quality job is rolling the dice.
I have a friend who runs and owns a maaco shop and he will tell people flat out. If you want a cheap job it will cost x amount of money and if you want it done right its going to cost about double that price. And he is capable of and does do quality work. However, you are taking a risk of getting a sandy paint job if you go to a random maaco.
He can paint your back bumper in an hour for $120 or he can take two days on the job and cost you closer to $400. It all depends. But to say that all maaco shops are the same is wrong. Like you said, they are independently operated. Its up to the owner and his employees to make sure the job gets done right. Just know where your going....

Judging from your posts here, you know your way around a shop. If you have the right people around you, it might be worth a shot to open one of your own, not Maaco's...
