'06 E320 CDI, '04 Sprinter 316 CDI
For these parts to work on a pre face lift W211, does one need to buy a the grill, a hood and headlights as well, or will these parts work with every other part currently on the car?

Headlights and hood are the same I believe you just need the grill

Uses the same grill. Not much convertion for 07, straight up install if fitment is good.

OEM is likely ABS plastic which is better than poly....but poly is light years better than fiberglass.

poly is more flexible than ABS plastic. OEM is poly.

I believe you only need the 07-09 grill to make it work. To do a complete facelift, then you'd also have to include the 07-09 headlights.

You also have to factor in how to fill the holes if you don't have parktronic sensors.
