Really curious why U09 MB-Tex dash disappeared from C-class sedan and GLC-class for MY21. Super disappointed, the stitched dash and door panels really set apart these interiors from other makes.

Could just be an accidental omission from the order guide. The dealer's NetStar system is the best source of truth, so ask them to check if you want to know for sure.

My guess is it’s driven to reduce complexity for the US market—a longtime problem.
Decided to hang onto my W205 and am waiting for the W206.

As for building on MBUSA, don't wait for that. They are very slow and don't put the builder up until the car is already on dealer lots most of the time.

you would have to order the car. It would be a 2022 model. 2021 productions are finalized so theres no modifications. Production starts by the end of SEPTEMBER 2021 and be delivered from Europe closer to november/december if no delays are present.
