3rd row seat was optional. And frankly, a bit of a gimmick. You can use it for kids in grade and middle school. An adult can't fit comfortably and they are not designed for little children. So they're very limited in scope.
More importantly, with the 3rd row seat you lose the spare tire. In the 3 years I've owned my car I've had to put on the spare at least half a dozen times. I would've been stranded in all of those instances had I had a useless 3rd row seat in the car. Just my ¢2 based on real world experience

The car comes w a space saver from the factory. 3rd row seat deletes it.
There's also a very useful compartmentalized tray on cars w/o 3rd seat. It's about 3" high and is located below the trunk lid and above the space saver. Very useful to keep tools, cleaning supplies, etc. there without cluttering the trunk.

3rd row seats have come in handy for us a few times w/ 2 young children--taking folks out to dinner, last minute carpool, picking up other kids, etc. Fortunate not to have needed spare tire yet.

Our 3rd row seats are used about one weekend every two weeks plus all local field trips. Super convenient for the kids and they love it. And there is plenty of space to store stuff in the bottom of the seat since it is just an empty compartment - the flat tire toolkit with the MB supplied air compressor takes up approx 15% of the space of what the spare tire would occupy.
I've seen at least one enthusiast who has a W212 AMG wagon and spent $5k+ to retrofit the 3rd row seats back in. I will never drive a minivan and my wife hates them as well.

More accurately, in North America 3rd-row seating (option code 844) was available from 2005-2006 in the E55 Wagon. It was offered again as an option from 2007-2008 in the E63 Wagon. Option 844 was NOT available in E63 Wagons for the 2009 model year.
