Most things I have seen are technically well above the A8. The car will also be quieter and will have something that should make you very happy... The steering wheel will be absolutely centered to the seat
But when it comes to active suspensions which I assume you are alluding to, Audi was 20 years behind and finally caught up. They did introduce the pre side-impact suspension raise with the A8. Kudos for that feature. MB seems to do it better though by raising the whole car vs just one side... That's how competition works. With each model, they like to one-up each other.
As for the interior, not sure where the cost cutting is coming in. From what I saw, there are better materials and more wood in the car than the current iteration.

I'm thinking I might switch to the S500 in this new body style. Funny they went back to the 500 nameplate instead of maybe S480.

pure marketing. "s500" has tonnes more cachet than "s480," "s450," etc. plus it harks back to an earlier day when the s500 was the cat's pajamas.

There is a report on the W213 forum that the 2021 E Class “All Terrain” Wagon will have an option for a pretty sophisticated dash cam system. I would assume that a similar system will be available on the W223? Anyone heard anything on this?

Requires Augmented Video for Navigation (U19)
Dashcam (21U)
The dash cam films and saves what's happening on the road in front of your vehicle – and also records the time and speed. This can help you in documenting the sequence of events in an accident, for example, and provide you with supporting evidence if necessary. Or you can hold on to landscapes and routes which are worth seeing and create your own automotive travel diary.
Components
•Camera in the windshield
•Recording of videos with a resolution of 1280 x 720 pixels (720p) and a frame rate of 30 Hz •Additional storage of speed and time, embedded in the video signal
•Menu in the media display, or optionally also control via the Touch Control buttons or touchpad •Storage option via USB stick using the Media Interface
•Video material can be viewed on a computer or the media display (only possible when vehicle is stationary) - for this the storage media must first be removed from the interface and reconnected
