To the OP: even with a bone stock E55 I had a similar experience... You don't realize how much the nannies are interfering on a regular basis until they aren't.
. I find it funny that we all complain about needing more HP (since 469 isn't enough) when in reality the nannies are probably only giving us half that amount during normal city driving.With a "normal" car, you can use the gas pedal as a binary switch without consequences.... With ESP off on an E55, the gas pedal is most certainly a sensitive and lethal analog device.

Not mine. Sure, I could crash it, and I can throw it sideways quickly by mashing the gas on a corner or flicking the steering-But my ESP is a NAGGING GRANDMOTHER.
Not to mention...with ESP off it's the same story...just a little looser. I have one of the sorry E55's that refuses to do a burnout with ESP off. Can't even get smoke. Tires within like 1.5% or less, and still fails. I wish my car was a lunatic with ESP off. Especially since nobody seems to know why some E55's are like this. You guys are lucky.

EDIT*-we need pushbutton dyno mode for e55's like mine.

I'd encourage anyone with a car of this pedigree to get to some club days at the road-race track and learn to drive it. It'll make you faster than ANY mod you'll EVER bolt onto the car! ;-)

If you're referring to me and not OP-there is noted difference in E55's and their ESP system performance. Some 05-06 cars have ESP that won't allow wheelspin even when off. This may be fine for some but for those of us that go to the track and need to heat tires it's crippling.

Even did a full dyno mode for a good few weeks like a nutjob on the streets.
I do have to admit, first time I got curious, which was very quick after purchase, I ended up trying to turn left onto an empty huge street with no divider. There was traffic on my right side, so the embarrassment burned even more, as they were just watching me fail. I ended up swinging the tail very nicely, but I guess the road is very slanted and I ended up doing a full 180* spin facing the people that where originally to my right.
Huge cloud of smoke too, the Pre Safe managed to stop my vehicle very quickly when it knew I was in trouble, granted I was in the middle of a huge 5 lane road with no traffic.
My windows and sunroof had nearly closed too before my motor was shut off. I didn't even notice it turn off, I just tried to leave the crime scene, but had to shift back into Park and turn it back on, drop it into drive and flip a 180* and escape the area.

You have to be careful bro, especially with the brutal low end torque. You are lucky the e55 is such a tank otherwise she would have come around on you even faster.
Don't be afraid of it man, find a nice wide open parking lot, put the car in dyno mode, and practice launching hard. Learn to keep it straight, it will give you a whole new respect for the car and could save your life if you ever got bent out of shape on the street homey.
