Where are the preferred jacking points, for an AMG GTR, when using a low profile floor jack?
iirc there are two small ‘arrows’ on the underside of the bodywork in between the wheels both front and rear showing you where the jacking positions are. Do not allow the Jack to touch the bodywork; it goes inside of it. Also, I used to just jack up the rear high enough so that the front wheel/tyre could be changed at the same time without having to move the jack when I was in a hurry.

Underneath the car almost inline with the car's A pillar is a rectangular "box" cut into the railing. You can order an aluminum "puck" style fixture that has an upright rectangular piece of metal that will fit into that box cutaway. If you also order a real hockey puck, you can snap the metal "puck" into the cut out box, then roll your jack under the car with the real hockey puck in the jack saddle. That should assist your car in clearing the sideskirts. May have to drive the car tires on a couple of boards to clear all that to begin with. The entire side of the car you are jacking on will go up. Be sure to use jack stands or similar under the car once lifted to preferred height. Bueller THAT...and be safe my friend!

There are also 2 jack/hoist points, 1 front & 1 rear, on each side near the front & rear wheels ... they look like this:
I suspect this is where the 4 pneumatic jacks are installed in the GT race cars. I have a hoist and made some lift blocks out of gome generic rubber lift blocks ... the carved concave divot helps to prevent them from slipping:
